Featuring authentic cuisine prepared and served by students under the expert direction of Executive Chef David Tallent.

Enjoy a fabulous three-course meal in the historic Tudor Room in the IMU served with optional, specially selected wine pairings. Vegetarian options are available for each course. Seating is limited and reservations are required.

The cost is $35 per person or $55 per person with wine pairings.* The registration deadline has been extended through Sunday April, 14.

Arugula Salad: Citrus, Fennel, Goat Cheese Crouton, Cherry-White Balsamic Vinaigrette

Warm Buratta: House Focaccia, Tomato Fondu, Olive Tapenade

Beet and Goat Cheese Ravioli: Orange, Hazelnuts, Fennel Pollen

Gnocchi Primavera: Spring Vegetable Ragout, Parmesan Broth

Amish Chicken Milanese: Roasted Cauliflower, Chickpeas and Swiss Chard, Gilled Lemon

Striped Bass: Saffron Risotto, Broccolini, Salsa Rossa

Optional wine pairing: Avanti Pinot Griogio 2017, or Montepulciano d'Abruxxo 2016

Ricotta Zeppole: Lemon Curd, House Berry Jam

Chocolate Ganache Tart: Coffee Whipped Cream, Espresso Chocolate Sauce

This event is the result of a unique collaboration between IU Dining, IU Catering, and Professor Brandon Howell’s Food and Beverage Class (SPH T302). The experience allows students to transfer classroom learning to a working environment where they encounter the operational and organizational constraints of a large food service operation.

Throughout this project, students have worked alongside managers, chefs, nutritionists, and marketers to present this very special evening. We hope you enjoy “A Taste of Italy!
