Spooky Vegan Spider Cookies

No Halloween party is complete without spooky treats. But if your idea of “frightening” is reading the ingredient list on a store-bought candy bar, we’ve got you covered. This vegan cookie recipe is proof that you can bring something delicious, festive, and almost suspiciously healthy to the party.

Spooky spider cookiesIngredients:

  • 1/4 cup shortening
  • 1/4 cup SunButter (or another brand of sunflower seed spread or nut-free butter of choice)
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg replacer (or 1 egg)
  • 1 tablespoon dairy-free milk
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour (or 1:1 GF Blend)*
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 24 mini free2b Sunflower Butter Sun Cups (or another brand)
  • Candy eyes
  • 1/4 cup vegan chocolate chips
  • For rolling only (do not add to cookie dough): 1/8 cup large-crystal, sparkly "sanding sugar"
